Soy milk

A type of 'milk' made from soya beans. It is highly nutritious, and has been drunk in China since ancient times, in its natural state. But in this form its distinct taste and smell doesn't resemble dairy milk - and make it unpalatable to many. So in the West, soy milk is treated to remove this flavour and make the end result more neutral.

Soy milk is useful to those who suffer from lactose intolerance and those who want to avoid animal fats.

Manufacturers now also flavour it, and turn it into milkshakes etc, as a low-fat product.
