Water-Buffalo (Bubalus Bubalis)
A bovine animal, coming in two sub-species. The swamp buffalo, native to the Philippines are Far East, and the river buffalo found between India and Italy. The former is used as a work animal and also breed for its meat, the latter is an efficient producer of high fat milk.
It's the latter we are concerned with here, as the former has no relevance to Britain. River buffalo supply over half India's milk and in Italy produce the main ingredient for the best forms of Mozzarella cheese.
