Cornish Yarg

A Cornish, semi-hard, cows milk cheese, founded in 1983 by a couple named Gray. Yarg, being Gray spelt backwards. Cheeses measure about 25cm/10 inches across and are covered in nettles - the recipe is based on one from the 15th century. There are two varieties - at 30% and a 40% fat; plus a version which includes wild garlic.
