An award-winning full-fat hard cheese made from organic pasteurised sheeps milk and vegetable rennet.

Cheeses have a slightly fudgy texture and a sweet caramel-like taste. A natural rind is formed during the maturation process. A smoked version is also produced. Cheeses are made in 2kg rounds. For more information see (
