An award-winning full-fat, organic, cows milk cheese produced by The Sussex High Weald Dairy at Horsted Keynes, Mid Sussex - using pasteurised milk and vegetarian rennet.
It's an unpressed cheese, but quite firm, with a slightly open texture and appley taste . Cheeses are matured for about 3 months and turned daily during this period.
