Peach Melba

A dessert created for Dame Nellie Melba ( Helen Porter Mitchell 1861-1931), the Australian soprano, by Georges Auguste Escoffier. It consists of ice-cream, served with peaches and a raspberry coulis. See 'Melba, Dame Nellie'
