The French traditional term for fruit combinations to make compotes, preserves and syrups. These are divided into red (rouge) and yellow (jaunes). The former consist of cherries, raspberries, redcurrants and strawberries; the latter, citrons (a species of lemon with a very thick skin, cultivated on the Mediterranean coast), lemons, oranges and Seville (bitter) oranges.
