Chopping Boards; colour codes
Catering establishments now have colour-coded chopping boards, to help stop cross-contamination, these are as follows -
White - used for bakery and dairy items.
Green - Salad and fruit
Red - Raw meat.
Yellow - Cooked meat.
Brown - Vegetables.
Blue - Raw fish.
