Sous Chef

The commercial kitchen term for the deputy head chef - of which there might be more than one, to cover all shifts. In large kitchens, where the head chef might have a more organisational role, the sous chef effectively runs the day to day running of the kitchen, and is supported by a team of chef de partie's and commis chefs.
