A hard, full-fat, cheese made at Menallack Farm in Cornwall by Caryl & John Minson, using local unpasteurised cows' milk and vegetarian rennet.

The cheese is based on a traditional Cheshire cheese recipe, but because of the nature of the Cornish soil – and the cows' effectively grazing on granite – the cheese is very different in character; having a dryish texture and mild herby flavours.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
