A hard, full-fat, cheese made at Menallack Farm in Cornwall by Caryl & John Minson, using local unpasteurised cows' milk and vegetarian rennet.
The cheese is based on a traditional Cheshire cheese recipe, but because of the nature of the Cornish soil and the cows' effectively grazing on granite the cheese is very different in character; having a dryish texture and mild herby flavours.
