An unpasteurised cows' milk cheese produced by the Maxwells from their herd of cows, reared in the Glendale Valley, at Doddington Dairy, Wooler, Northumberland. It resembles a Dutch Gouda, in style, but is more moist and creamy and has a strong, fruity, after taste. Its matured for between 8-12 months, and when fully mature is strong and vigorous in flavour.
