Bellingham Blue

A cheese, made by Glyde Farm Produce at Castlebellingham, County Louth, in the Republic of Ireland, by Peter Thomas, from unpasteurised cows' milk. It's matured from between 10 months to three years - the more mature cheeses having real character and excellent flavour.
