A cheese, made from the unpasteurised milk of Red Poll cattle, by Llanboidy Cheesemakers of Whitland, Carmarthenshire - it's believed to be the only cheese in Europe made with such milk. Cheeses are hard-pressed, and have a smooth, almost silky texture that contrasts with its robust flavour. It's normally matured for 5 months, but this varies with the seasons. A version is made containing laverbread (seaweed).
