A Cheddar-style unpasteurised cows' milk cheese, pressed and then matured from about 3 to 4 months. Its made by The Traditional Cheese Dairy at Stonegate in East Sussex, and based on 'Castle Hill' a cheese originally made by another cheesemaker David Doble.
