High Weald Dairy

An excellent family-run dairy, based at Horsted Keynes in Mid Sussex, using organic ewes’ and cows’ milk from their own animals to make cheese. The former includes Halloumi, Pecorinio, Ricotta and their own recipe ‘Sussex Slipcote’ and ‘Duddleswell’; the latter '‘Ashdown Foresters'’, 'Brighton Blue'; 'Brother Michael', ‘Cowslip’, 'Saint Giles' and 'Tremains Cheddar'.
