Red Mullet (Mullus Surmuletus)

An excellent fish, belonging to the Mullidae family, and growing up to 40cm (although half this length is more common) occurring in the Mediterranean and in the North Atlantic as far north as Southern Scotland.

In the U.S.A, it is known as Goatfish., but is no relation to the Grey Mullet. It can be fried, grilled or baked, either whole or filleted; but must by carefully scaled first. The wafer-thin scales can fly up into your eyes unless you take care.
