Fromage du Tete / Tête:

The French name for what we call brawn and the Italian 'coppa cotta'. It's made from the meat of a slowly braised pigs head, in a liquid naturally-set with pigs trotters - which produce a natural jelly.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
