A hard cows' milk cheese, from Northern Italy (near the Piave river). It resembles a young Parmesan in style. It has a slightly walnut flavour, like Gruyere, plus the caramel sweetness of Gouda.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
