An award winning cheese, made by Stacey Hedges and Julie Cheyney at Herriard in Hampshire. It's made from unpasteurised cows' milk from a single herd of Ayreshire's; and then ripened for 4 weeks.
It's available from good specialist cheese-mongers or from Neal's Yard in London (q.v.) who operate a mail order service.
