Portobello / Portabella Mushroom:

The 'modern' name for what used to be called 'field mushrooms' in Britain. Yhey are cultivated, and when small sold under the name 'Chestnut' mushroom. They have a full flavour, so ideal when this is required or when both flavour and a dark colour needs to be added to sauces.
