Ling (Molva Molva)

An excellent fish, growing up to nearly 2 metres, but for our purposes only found in Britain's northern waters. Their flesh resembles cod and is sometimes found salted to be made into brandade and suchlike. In the Orkney and Shetland Islands a fish called Tusk is found which resembles a shorter, fatter, ling. Both make good eating and can be substituted for Monkfish. An excellent fish, growing up to nearly 2 metres, but for our purposes only found in Britain's northern waters.
