A form of red chicory available between November and March. It has been developed from Radicchio di Teviso (generally simply known as Radicchio), but has a milder and less bitter flavour. It is probably at its best gently sautéed in olive oil and served as a side dish.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
