Pateria de Soussa

A Spanish company, situated about 50 km north of Seville, producingwhat they refer to as ethically-produced foie gras from geese. The method used, is to to employ the birds natural instinct to migrate to Africa in the late autumn. During the last few weeks before their natural departure, they are tempted into natural gluttony by being presented with piles of acorns, figs, lupins and olives on which they gorge – before being humanely gassed.

The company sells its product under the name 'Ganso Iberico', but at the time of writing has no web site.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
