Wells Alpine Cheese

 A Swiss-style pressed cows milk cheese, made by Mrs Temple's Cheeses near Wells-next-the-Sea - from the farms herd of Brown Swiss Cattle. It can be used in any way you might use Gruyere or Emmenthal – so is ideal for slicing, grating and cooking. In the photograph, it is second from the bottom of the stack of the cheese varieties produced on the farm.
