Wells Alpine Cheese
A Swiss-style pressed cows milk cheese, made by Mrs Temple's Cheeses near Wells-next-the-Sea - from the farms herd of Brown Swiss Cattle. It can be used in any way you might use Gruyere or Emmenthal so is ideal for slicing, grating and cooking. In the photograph, it is second from the bottom of the stack of the cheese varieties produced on the farm.
