A cheese made by the Neal's Yard Creamery near Dorstone in Herefordshire, with unpasteurised goats' milk. Cheeses are about 3 ins/7cm in height, and are sold as soft young cheeses. They are fluffy in texture and have an ash coating. Dorstone is good both for eating or cooking in tarts, quiches etc. For more information see (
