Emerald Irish Brie

A Brie-style cheese, made from pasteurised milk and vegetarian rennet by The Carrigbyrne Farmhouse Cheese Company in County Wexford, with milk from their closed herd of Friesian cattle.

Cheeses are made in 3kg wheels, which take longer to mature than smaller cheeses – giving this cheese pleasant mushroom and lemon flavours. For more information, see (
