Hereford Hop

A hard pasteurised cows' milk cheese, made by Charles Martell at Dymock in Gloucestershire.

Cheeses, made with full-fat milk using a mixture of milk from the farms rare-breed Gloucester cattle and local Friesian milk, are cooked in toasted hops – which as well as adding an interesting flavour, help maintain moisture. The cheese makes excellent Welsh Rabbit.
