A Red Leicester-style cheese, made with unpasteurised cows' milk and traditional rennet by Westcombe Dairy near Shepton Mallet in Somerset.
Cheeses are made in 9-10kg rounds and have a mild and flowery flavour, thought by many to have hints of apple and a smoky aroma. They are cloth-wrapped and matured for between four to six months. For more information see www.westcombedairy.com (http://www.westcombedairy.com)
