An award-winning Caerphilly made with unpasteurised cows' milk by The Teifi Dairy in Dyfed. Cheeses have a mild and sweet flavour and are sold at various ages being creamy when young (at say 5 months), developing a tang after a further month, and becoming former and with a definite and lasting tang by 8 months. Most is sold fully matured after 14-15 months, while some are smoked. Cheeses are made in 2.7-3.7kg rounds while larger cheeses weighing around 8kg are marketed under the name 'Remarkable Valley'.
