Golden Cenarth

A rind-washed cows' milk cheese, made by The Caws Cenarth Dairy at Lancych in Carmarthenshire. They use unpasteurised organic milk taken from the morning milking of their herd of Friesian-Holsteins – cheeses being made from the dairies award-winning Caerphilly/Caerffili base, but exposed to a natural strain of Brevibacterium.

Cheeses produced during the summer are softer than winter cheeses, which have a firmer texture and robust flavour. For more information see www.cawscenarth.co.uk (http://www.cawscenarth.co.uk/)
