Smoked Cuddys Cave (St. Cuthbert's Cave)
A smoked version of Cuddy's Cave an unpasteurised cheese made by The Doddington Dairy at Wooler in Northumberland, using traditional rennet.
Cheeses are only self-pressed, so it's slightly more moist than its sister cheese, and smooth and creamy. Cheeses are finished by being smoked over oak at The Teviot Smokery, and this flavour penetrates through the entire cheese.
