Old Worcester White
A hard-pressed cheese, made by Ansteys of Worcester using their pasteurised cows' milk and vegetarian rennet.
Cheeses are matured for a minimum of 5 months, but develop much more flavour if allowed to develop for a longer period.
It was evidently given the title 'White' as the dairy were attempting to make a blue cheese, but it refused to develop as such. For more information see www.ansteys.com (http://www.ansteys.com/)
