Producers of top-quality Wensleydale Cheese sold under the name 'King Richard III Wensleydale'. Cheeses are made using unpasteurised cows' milk and vegetarian rennet in 500gr and 2.3-2.7kg truckles, and after brief brining, are matured for at least 3 weeks.
