A rind-washed organic cows' milk cheese made by The High Weald Dairy at Horsted Keynes in Mid Sussex, using pasteurised milk from their own herd.
It's made by washing a 6 week old Saint Giles (q.v.) in brine and natural cultures several times a week for 4 weeks.
