Double Berkeley

A hard cows' milk cheese made by Charles Martell using pasturised milk and vegetarian rennet. It's similar to Single Gloucester cheese in style – so fresh and buttery – but has added annatto, which gives an orange tinge. The cheese also has an unusual mottled appearance.
