A hard cows' milk cheese made by Smarts Gloucester Cheese at Old Ley Farm at Churcham, using unpasteurised milk and vegetarian rennet.

The finished cheese can be used as you would a Parmesan, but starts as a Single Gloucester, but is aged for at least one year. It has a dry texture and salty tang. Cheeses are made in 2.75kg rounds. For more information see (
