A hard milk cheese, produced by the Staffordshire Organic Cheese Company at New House Farm near Newcastle-Under-Lyme in Staffordshire using unpasteurised organic milk from milk produced locally.

Cheeses have a slightly gritty texture and a smoky tang, and can be used for grating in the style of Pecorino or Parmesan.
