Monks Folly Cheese
A pasteurised cows milk cheese, made by Shepherds Purse at Leachfield Grange near Thirsk in North Yorkshire using local milk and vegetarian rennet.
The cheese has a crisp, clean flavour and a chalky texture on the inside when young but with age, becomes soft & ripe and develops a fuller rounder flavour. For more information see www.shepherdspurse.co.uk (http://www.shepherdspurse.co.uk/)
