Monks Folly Cheese

A pasteurised cows milk cheese, made by Shepherds Purse at Leachfield Grange near Thirsk in North Yorkshire – using local milk and vegetarian rennet.

The cheese has a crisp, clean flavour and a chalky texture on the inside when young – but with age, becomes soft & ripe and develops a fuller rounder flavour. For more information see (
