Fine Fettle Yorkshire Cheese
A hand made ewes' milk cheese, made by Shepherds Purse at Leachfield Grange near Thirsk in North Yorkshire using local pasteurised milk and vegetarian rennet.
Cheeses are slightly salted, then matured over a 14 day period. The cheese develops a slightly crumbly texture and a piquant flavour. For more information see www.shepherdspurse.co.uk (http://www.shepherdspurse.co.uk/)
