A semi-hard sheeps milk cheese, made by Little Acorn at Bethania in Ceredigion using unpasteurised ewes' milk and vegetarian rennet.
The cheese is based on Wensleydale, and shares that cheeses' crumbly texture, but it melts in the mouth releasing a herby flavour, tinged with that of nuts & citrus. Cheeses ripen in 3 to 6 months.
