The basic cheese is based on a full-fat Valancay-type variety, and shaped like a truncated pyramid and coated with an oak ash/sea salt - from France.
Various other variations such as 'Cerney Pepper' (rolled in coarse black pepper), 'Cerney Banon' (brandy-washed then wrapped in vine leaves) and 'Cerney Starter' (a smaller base-type cheese).
