St. Tola Mature
An unpasteurised Irish goat's milk cheese, made by Siobhan Ni Ghairbhith at Inagh, County Clare, Ireland. The cheese is a more mature version of the dairy's St. Tola Fresh, and is made in kg logs and has harmonious fruity and yeasty tastes, a distinctive smell of pears and a firm creamy texture.
