An excellent Cheddar, made with unpasteurised milk from the dairies herd of Montbellieard cows, near Ennistymon in County Clare.

Cheeses are wrapped in cheesecloth, then most are matured for between 9-12 months; however, some are held back for 18 months to develop a more powerful flavour. For more information contact Lucy Hayes, Drinagh, Ennistymon, County Clare, Republic of Ireland Email: mtcallan@oceanfree.net
