Air-Frozen Chicken

Chicken which has been rapidly frozen without added water. Most frozen chicken contains as much as 10% water, which not only gives the processor a price advantage, partially destroys the natural texture of the meat as it expands into ice. Iceberg and Waitrose are among the shops offering air-dried chicken.
