Swallet Cheese

A sheeps (ewes) milk lactic cheese, made by the Gott family at Holder Dairy Farm in Cumbria, using unpasteurised milk from the farms flock of Lacaune ewes.

Cheeses tend to be firm, with a softer centre - with a hazelnut nutty flavour when young, developing to earthy - straw like - flavours with age, when a natural blue mould might develop. For more information see (
