Carageen/carrageen/carragheen (chondrus crispus)

The Irish name for a form of seaweed, which grows around Northern Europe and North America. It's dark purple or green when growing, but when dried it''s bleached and called Irish Moss or Sea Moss. It has a gelatinous quality and is used as a vegetable gelatine. See Ocean Swell Jelly; Stabilisers
