Carrots Vichy

Sliced carrots cooked in water with a little butter and sugar. As the water evaporates, an attractive glaze forms on the vegetables. Traditionally, Vichy water (which has a high mineral content) should be used. Some modern chefs add a little bicarbonate of soda instead, but this reduces the vitamin C content of the carrots.
