Look for cauliflower with fresh compact heads, with no discolouration; if the buds are spread out or spotted, this means that the cauliflower is old or has been exposed for too long in the sun. People with sensitive digestion may find that raw cauliflower causes flatulence.
Cauliflower is rich in vitamins C, B1, and B2 and is a good source of calcium, magnesium, phosphorus, potassium and sulphur. See also Brassica.
