One of Britain's top Cheddar's, made by the Montgomery family at Manor Farm near Yeovil.
They use unpasteurised milk, from the farms herd of Friesians, plus traditional calf's rennet. Cheeses are aged for between 10-18 months (sometimes more).
Young, 10 month cheeses are fairly moist and have a 'soft' slightly-sweet flavour, but as they age a strong tang develops and older cheeses usually develop a few threads of blue near the rind (cheeses with this should in no way be avoided).
