Chicory; Culinary uses

Add young leaves and flowers to salads, add forced leaves as a winter salad. Braised whole "witloof" chicory wrapped in bacon, and serve with a cheese sauce. The roots of the Magdeburg/Brunswick varieties can be used as a coffee substitute - when ground. See 'Chicory';
